A satisfying, healthy, yummy snack you can make in minutes. Just pan toast nuts and seeds, add some spices, place on parchment paper, add honey and scrunch it all up. High in vitamins and minerals, nuts and seeds contain quite a bit of fat, but the good fats. Enjoy a handful at a time, but be warned they are addictive! We also add these as a topping in meals for a sweet crunch!
Honey Toasted Nuts & Seeds
Yield: 1 cup nuts and seeds
Prep Time: 2 minutes
Cook Time: 7 minutes
INGREDIENTS
1 cup mixed raw nuts and seeds
1 tsp cinnamon
½ tsp cardamom (optional)
⅛ tsp ground pepper (optional)
1 Tablespoon honey
instructions
Dry toast nuts in a medium-large saucepan on medium heat until golden brown, about a few minutes, tossing and turning to avoid burning. If adding sunflower seeds or pine nuts, add these last, and sesame seeds at the very end and toss often to avoid burning.
Sprinkle spices and toss some more.
Transfer on parchment paper and let cool for a few minutes.
Add honey and coat nuts and seeds by scrunching up the parchment paper.
Store in a tight fitting container. May store in the refrigerator to last longer. Gift in a box or enjoy as a snack, a side, or topping on meals.

Raw Nuts & Seeds
Raw nuts & seeds last longer when stored in a cool, dry place. Once they are exposed to heat, or are toasted or roasted the oils go rancid quicker and can spoil within a few weeks. Adding spices, sugar or honey will increase shelf life of nuts and seeds that have been toasted or roasted, but they do not keep as long as raw ones. Raw nuts last 3-6 months at room temperature, and 1 year if refrigerated.

One of the guiding Ayurvedic principles towards health is that most diseases can be traced back to poor digestion. When it comes to raw, uncooked nuts, seeds, vegetables, leafy greens, beans, lentils, and grains Ayurveda understood how these foods eaten raw is difficult to digest in humans and therefore need to be cooked. With modern science we know these substances are phytates, lectins, and oxalates which can create digestive and other potential health problems.
